200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

Instructions

For the Syrup: Combine all the ingredients inside a pan, bring to a simmer, mixing so the sugar melts. Next, remove from the stove and leave to cool fully. Decant into an sealable bottle, seal and refrigerate it in the fridge, it can be stored for up to one month.

To make Cocktail Base: Mix all the liquids into one big jug, let it rest for one hour, then strain preferably using muslin, making it perfectly clear.

For serving: Measure 85ml from the batch mix to a stirring glass packed with ice, and stir carefully for about 60 seconds to cool it down. Filter into a cold coupe glass or similar, decorate with some cranberries and finish by giving it a brief mist of the essential oil over the drink.
